
Maple Tofu with Asian-Style Noodles & Sesame Beans

450 g (1 pack) lb extra-firm tofu
125 mL (½ cup) cup maple syrup
60 mL (¼ cup) cup soy sauce
2 cloves garlic, minced
15 mL (1 tbsp.) tbsp. canola oil
1 L (approx. 700 g) (4 cups) cup green beans
300 g (1 package) oz Asian-style noodles
30 mL (2 tbsp.) tbsp. sesame oil
To taste salt and pepper
To taste sesame seeds

Directions
1In a large pot, set water to boil.
2Pat tofu dry and slice; then cut diagonally into triangles and set aside.
3In a bowl, combine maple syrup, soy sauce and garlic. Set aside.
4In a skillet, heat oil and brown tofu triangles for 2 minutes. Flip and add sauce. Reduce heat to medium and simmer for 6 to 8 minutes or until sauce becomes syrupy.
5Meanwhile, cook beans for 4 minutes in boiling water. Add Asian noodles and continue cooking for an additional 3 minutes. Drain noodles and beans, return to pot and add sesame oil, salt and pepper to taste.
6Serve maple tofu over noodles and beans. Top with sesame seeds to taste.
