
Beef medallions with red wine and dark chocolate sauce

6 beef medallions
1 bay leaf
15 mL tbsp orange juice
10 mL tsp sugar
5 mL tsp Dijon mustard
375 mL cup beef broth
375 mL cup red wine
As required olive oil
45 mL tbsp flour
To taste thyme
To taste salt
2 garlic cloves
1 onion
2 slices of bacon
30 g cup Lindt Excellence 70% cocoa dark chocolate
6 beef medallions
1 bay leaf
15 mL tbsp orange juice
10 mL tsp sugar
5 mL tsp Dijon mustard
375 mL cup beef broth
375 mL cup red wine
As required olive oil
45 mL tbsp flour
To taste thyme
To taste salt

2 slices of bacon
30 g cup Lindt Excellence 70% cocoa dark chocolate
Directions
1Fry chopped bacon in a saucepan. Add onion, garlic, thyme, salt and pepper.
2Sprinkle on flour (and oil as need be to moisten flour).
3Stir in red wine, broth, mustard, sugar, orange juice and bay leaf, mixing well. Allow to simmer for 10 minutes.
4In the meantime, sear beef medallions in olive oil until desired doneness is reached. Finish cooking in the oven, as need be.
5Remove bay leaf from the sauce and add chocolate, allowing to melt. Stir well to combine.
6Strain sauce. Add cream to sauce and reheat.
7Spoon sauce onto beef medallions and garnish with orange zest and grated chocolate. Serve with a julienne of vegetables.
